What is Toyama Yakuzen?

Definition of “Toyama Yakuzen”

Using fresh ingredients from Toyama, while taking into consideration nutrition, safety and security, the food also includes ingredients that have long been known to have health benefits.
The people who make the food can provide information about the ingredients to the people who eat it.

  • Ingredients that have long been known to have health benefitsginkgo, turmeric, licorice, ginger, soybeans, carrots, garlic, sesame, oysters, sardines, etc.

  • Fresh Toyama ingredientsToyama rice, figs, myoga ginger, buckwheat, turnips, potatoes, scallions, white shrimp, mystical fish, Toyama pork, etc.

  • Safety and security of ingredients and cooking methodsIngredients that are made with as little use of pesticides as possible, and as little use of chemical seasonings as possible.

  • Providing information to those who eat the foodWe have information and stories about the nutritional and safety aspects of ingredients, and can communicate with those who eat the food about food and health.

*In this project, “food ingredients that have long been known to have health benefits” refers to those that are listed in the government’s “List of Essential Ingredients (Raw Materials) that are not considered to be pharmaceuticals unless they claim to have pharmaceutical efficacy.”

“Toyama Yakuzen” certification criteria

All of the following criteria 1 to 6 must be met.

At least one Toyama ingredient is used, with consideration given to local production for local consumption and seasonalproduce for seasonal consumption.

The restaurant uses at least one ingredient that has long been known to have health benefits.It uses ingredients that utilize ancient wisdom about food.

The restaurant uses ingredients and cooking methods that take safety and security into consideration, anduses ingredients that are free of pesticides and chemical seasonings as much as possible.

You can provide customers with information about the ingredients used. You can explain to customersthat the dishes you prepare use ingredients from Toyama and ingredients that are known to have health benefits, and how they are good for the body.

We participate in training sessions related to “Toyama Yakuzen.”We provide information to chefs so that they can deepen their understanding of the standards of “Toyama Yakuzen” and serve dishes that meet these standards to customers.

The food is nutritionally balanced, visually appealing, original, and delicious, making it a perfect example of “Toyama Yakuzen.
It evokes the image of Toyama as a “city of medicine,” and conveys to diners through the food that it is good for the body, helping to restore, maintain, and improve health. It also helps solidify the image of Toyama as a place rich in seafood and mountain produce.
